Sweet Swap: Sugar-Free Peanut Butter Cup Recipe

The holiday season and cookies go hand-in-hand. If you’re looking to satisfy your sweet tooth in a healthier way, try one of America’s favorite treats sans sugar. This sugar-free peanut butter cup recipe is filled with fiber and protein and has less than 100 calories per cup. 

Ingredients:

  • 5 ounces unsweetened baking chocolate
  • 2 tablespoons butter or coconut oil, divided
  • 4-6 packets powdered stevia
  • 2 tablespoons unsweetened natural peanut butter
  • 2 teaspoons almond meal/flour
  • 2 droppers plain liquid stevia

Directions:

  • Melt the chocolate with 1 tablespoon butter.
  • Add stevia to taste.
  • In another bowl, mix the remaining ingredients and stir until smooth.
  • Place 1 teaspoon of the chocolate into a peanut butter cup mold. Ice cube trays also work well.
  • Spoon a heaping ½ teaspoon of peanut butter on top of the chocolate.
  • Top the peanut butter with another teaspoon of chocolate.
  • Refrigerate until hardened, approximately 1 hour.
